Ranger Cookies Recipe

Ingredients
  

  • 1 cup Unsalted Butter (softened) (225g)
  • 1 cup Granulated Sugar (200g)
  • 1 cup Brown Sugar (200g)
  • 2 Eggs2
  • 2 tsp Vanilla Extract
  • cups All-Purpose Flour (250g)
  • 1 tsp Baking Powder1 tsp
  • 1 tsp Baking Soda1 tsp
  • 1/2 tsp Salt1/2 tsp
  • 2 cups Rolled Oats (200g)
  • 1 cup Shredded Coconut (100g)
  • 2 cups Crispy Rice Cereal (50g)
  • 1 cup Optional: Chocolate Chips or Nuts (150g)

Instructions
 

  • Step 1: Preheat the Oven
    Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Step 2: Cream Butter and Sugars
    In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  • Step 3: Add Eggs and Vanilla
    Beat in the eggs one at a time, followed by the vanilla extract, until well combined.
  • Step 4: Mix Dry Ingredients
    In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Step 5: Fold in Mix-Ins
    Gently fold in the oats, shredded coconut, crispy rice cereal, and any optional mix-ins like chocolate chips or nuts.
  • Step 6: Scoop and Bake
    Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown. The centers may still look slightly soft.
  • Step 7: Cool and Serve
    Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
