Instructions
PreparationPreheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Mixing Dry IngredientsIn a medium bowl, whisk together the gluten-free flour, xanthan gum (if needed), baking powder, and salt.
Creaming Butter and SugarIn a large mixing bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes.
Adding Eggs and FlavoringsBeat in the egg, vanilla extract, and almond extract (if using) until well combined.
Combining Wet and Dry IngredientsGradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough is sticky, refrigerate for 30 minutes.
Rolling and CuttingRoll the dough out on a lightly floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
BakingBake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
