Date Cake Recipe

Equipment

Ingredients
  

  • 1 1/2 cups Pitted Dates (chopped) (225g)
  • 1 cup Boiling Water (240ml)
  • 1 tsp Baking Soda
  • 1/2 cup Unsalted Butter (softened) (115g)
  • 1/2 cup Granulated Sugar (100g)
  • 1/2 cup Brown Sugar1/2 cup (100g)
  • 2 Eggs
  • 1 3/4 cups All-Purpose Flourcups (220g)
  • 1 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 1/2 cup Optional: Chopped Walnuts (50g)

Instructions
 

  • Step 1: Prepare the Dates
    Place the chopped dates in a bowl. Pour the boiling water over them and stir in the baking soda. Let sit for 10 minutes to soften the dates.
  • Step 2: Prepare the Pan
    Preheat your oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper.
  • Step 3: Cream Butter and Sugars
    In a large mixing bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy.
  • Step 4: Add Eggs
    Beat in the eggs one at a time, mixing well after each addition.
  • Step 5: Combine Dry Ingredients
    In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  • Step 6: Mix Wet and Dry Ingredients
    Gradually add the dry ingredients to the creamed mixture, alternating with the softened date mixture. Stir until just combined. Fold in chopped walnuts if desired.
  • Step 7: Bake the Cake
    Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  • Step 8: Serve
    Serve plain, dusted with powdered sugar, or topped with a caramel glaze for extra indulgence.
